Creamy Cajun Chicken Pasta

A delicious, spicy, and creamy pasta dish packed with Cajun flavors!

 Ingredients:

✔️ 2 boneless, skinless chicken breasts (sliced into strips)
✔️ 2 tbsp Cajun seasoning (adjust to spice preference)
✔️ 2 tbsp olive oil or dairy-free butter
✔️ 3 cloves garlic (minced)
✔️ 1 bell pepper (sliced – red, yellow, or green)
✔️ 1 small onion (diced)
✔️ 2 cups pasta (penne or fettuccine works best)
✔️ 1 cup coconut cream or dairy-free heavy cream (or regular heavy cream)
✔️ ½ cheddar cheese
✔️ 1 cup chicken broth
✔️ Fresh parsley & lemon wedges for garnish

Instructions:

1️⃣ Cook the Pasta – Boil pasta in salted water according to package instructions. Drain & set aside.

2️⃣ Cook the Cajun Chicken – Toss chicken strips with Cajun seasoning & paprika. Heat olive oil in a pan over medium-high heat. Cook chicken for 4-5 minutes per side until golden & cooked through. Remove & set aside.

3️⃣ Sauté Veggies – In the same pan, add a little more oil. Sauté garlic, onions, & bell peppers for 3 minutes until softened.

4️⃣ Make the Creamy Sauce – Pour in chicken broth & let it simmer for 2 minutes. Stir in coconut cream (or heavy cream) & parmesan cheese. Add black pepper, salt, & red pepper flakes. Let the sauce thicken for 3-4 minutes.

5️⃣ Combine Everything! – Add the cooked pasta & mix well in the sauce. Return the Cajun chicken to the pan & toss everything together.

6️⃣ Garnish & Serve – Sprinkle fresh parsley, extra Cajun seasoning, & serve with lemon wedges!
